Cacao Powder vs. Cocoa Powder
In the ingredients list below you will see one of the main ingredients in our Easter Raw Chocolate Recipe is Cacao Powder. Cacao Powder is very different from the conventional Cocoa Powder that you find in the baking aisle at the grocery store.
Cacao Powder is jammed packed with nutrients. More specifically it is full of antioxidants and magnesium. It is a true Super Food. The Cacao bean is taken from it’s original state and ground into a powder. That’s it! Nothing added and no nutrients destroyed.
All the nutritional benefits are untouched. Cacao Powder is very high quality and nutrient dense.
As mentioned above, Cocoa Powder is a conventional baking product found at the grocery store. It is not a health food. In this case the Cacao Bean is striped of it’s nutrients through a heating process then it is ground into a powder.
AND…milk ingredients and refined sugar is added decreasing it’s nutrient quality immensely. Adding these low quality ingredients increases it’s quantity so more can be sold at a cheaper price.
Be very careful when purchasing Cacao powder. Go to a local health food store that you can trust. Read the ingredients. It should have one ingredient-Cacao Beans. Also make sure it is Raw. That way you can be sure that the nutrient quality hasn’t been damaged.
What you’ll need…
1 cup cacao powder
3/4 cup cacao butter
6 tbsp honey (raw, unpasteurized is best)
Let it melt…
Let the cacao butter melt on very low heat. In a crock pot is the best way to make sure the heat doesn’t get to high. While you are waiting for the cacao butter to melt, line a cookie sheet with parchment paper. Once the cacao butter is melted add the honey.
Make sure it is well combined with the cacao butter. Add the cacao powder whisking very quickly. Pour chocolate mixture onto parchment paper or if you have chocolate molds you can pour into the molds.
Dress it up…
Get creative and add flavour to your chocolate in any way you desire. Sprinkle the ingredients you choose on top of the chocolate and add a dash of Himalayan sea salt.
- Crushed Candy Canes
- Hemp seeds
- Crushed almonds
- Dried fruit such as cranberries
- A drizzle of natural PB
- A pinch of Cayenne Pepper (adds a little heat)
- Puffed Quinoa (adds a little crunch)
- Candied Ginger
- Cacao Nibs
Let it freeze…
Place the cookie sheet or molds very flat in the freezer. Let freeze for about 20 minutes.
Break it up…
Remove from the freezer and cut the chocolate into pieces with a knife or break it into to pieces like bark. If you used molds they should pop right out. Store chocolate in an airtight container in the freezer, if they last long enough to freeze ;).
