Introducing the healthiest gingerbread cookies out there: Complete Truth Protein Gingerbread Cookies are here. I have been working on this recipe for quite some time so I am pleased to have FINALLY perfected it.
Most gingerbread cookies I have made in the past have ended up hard as a rock. These Complete Truth Protein Gingerbread Cookies are soft and moist. Probably due to the applesauce I put in them.
The great part about this Complete Truth Protein Gingerbread Cookie recipe is that they have very little fat and contain no refined sugar so feel free to have a few!
- 2 cups Complete Truth Protein
- 1/4 cup maple syrup
- 1/8 cup blackstrap molasses
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tablespoon ginger
- 1 egg (or 1 chia egg)
- 1 tsp cinnamon
- 1/4 tsp cloves
- 1/4 tsp nutmeg
- 2 tablespoon applesauce
- 1 tsp vanilla extract
- 1 tbsp coconut sugar (optional)
Steps to Follow
Pre-heat oven to 350 degrees.
Mix the dry ingredients in one bowl.
Mix wet in different bowl.
Add dry to wet and mix until well combined.
Place tablespoon amount of dough onto a cookie sheet lined with parchment paper. Flatten with a fork and sprinkle with coconut sugar if desired.
Bake the cookies for 8-10 minutes and then let them cool a bit before removing.
Make 12-15 cookies.
A note about the dough
The dough will be stickier and a bit runny compared to traditional cookie dough. That’s ok! It’s suppose to be. Once cooked they will rise and turn out just fine.
