These Complete Truth Protein Shortbread Cookies are made without gluten, dairy, soy or butter. We tried multiple times to make them sugar free but they were a crumbly MESS. We did use a small amount of a high quality raw sugar to help keep them together.

You will most likely have to hide these cookies because if you don’t they will disappear. Go ahead and make them today. You won’t be disappointed.

Complete Truth Protein Shortbread Cookies

Ingredients 

1 cup rolled oat flour or oat flour

1/2 cup Complete Truth Protein

1/4 cup coconut oil

1/4 cup apple sauce

1/4 cup raw sugar

1/4 cup maple syrup

2 tsp. vanilla

1/2 tsp. Himalayan salt 

1/4 cup chocolate chips

Step One

Pre-heat oven to 350 degrees celsius.

Blend 1 cup rolled oats in blender into smooth. You want a flour consistency. If you purchased oat flour then you are ready to go. No need to do any blending.

Step Two

In a medium size bowl, whisk together oat flour, Complete Truth Protein and Himalayan salt.

Step Three

In a large bowl, cream together coconut oil and raw sugar. Add apple sauce, maple syrup and vanilla. Stir until well blended.

Step Four

Pour half of the dry mixture into the wet mixture. Stir well. Add remaining amount of dry mixture and stir until well combined. It should form a large dough ball.

Please Note: The dough will be stickier than conventional shortbread dough.

Step Five

Place dough in freezer for 20-30 minutes.

Step Six

Remove dough from the freezer. Spoon dough into balls with a Tablespoon. Roll and drop onto a cookie sheet lined with parchment paper.

Step Seven

Place 2-3 chocolate chips in the centre of the dough ball and press down. Cookie will remain in the shape that they are before baking.

Bake for 15 minute.

Makes 15-18 cookies.
