Dairy-Free Creamy Avocado Pasta Salad

Salad Ingredients

  • 1 box whole wheat or GF pasta
  • 1/2 long English cucumber, chopped
  • 1 pint cherry tomatoes, sliced in half
  • 1/4 cup chives, chopped
  • 1/2 yellow pepper, chopped
  • 1/2 cup kalamata olives, sliced in half
  • Himalayan salt
  • Pepper

Creamy Avocado Sauce Ingredients

  • 2-3 ripe avocados
  • 1/2 cup fresh basil
  • 1 lemon, juiced
  • 2 cloves garlic
  • Himalayan salt
  • Pepper

Putting the Salad together

Cook pasta according to package instruction. Once pasta is cooked, drain and set aside to cool. While pasta is cooling chopped all veggies. Prepare the sauce by adding all ingredients to a food processor or blender. Blend until creamy and smooth. Once pasta is cooled add the veggies and pour the sauce over top. Stir until well combined. Add Himalayan Salt and pepper to your liking.
