Healthy Snacking can be a challenge for many, especially if you have children. What to give them, what will they eat, what’s healthy and what will they enjoy?
All questions parents struggle with on a daily basis. And what about if you’re active and working out. Need a boost of energy? Look no further, these Irish Protein Balls are the perfect answer to give you that sustainable energy we’re all looking for.
1 cup rolled oats
1/2 cup natural peanut butter or almond butter
1/3 cup honey or maple syrup
1/2 cup Complete Truth Protein
1/2 cup raisins or chocolate chips
1 tsp. vanilla
3-4 cups spinach
1/4 – 1/2 cup chopped pistachios (optional)
1/2 cup shredded coconut (optional)
Mixing it up…
Mix oats, Complete Truth Protein, pistachios and chocolate chips in a large bowl.
Blend peanut butter, honey, vanilla and spinach in blender until smooth.
Pour wet mixture from blender into bowl with the dry mixture.
Stir and combine well. Using a tablespoon amount, roll mixture into balls. Roll in coconut. Store in the fridge or freezer.
