Zucchini Pasta with Red Sauce



  • 4 medium sized zucchini
  • 2 tbsp. coconut oil
  • ½ cup onion
  • ½ med sized onion
  • 2 clove of garlic
  • 1 green pepper
  • 1 cup mushrooms
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 can tomato paste
  • 1-2 cup spinach
  • 1 Tbsp. oregano
  • 1 Tbsp. parsley
  • 1-2 Tbsp. nutritional yeast
  • Himalayan Salt
  • Pepper


Use a spiralizer or grater to “chop” zucchini into noodles. In a medium size pan melt half the coconut oil.

Add 1 clove of minced garlic and half the onions. Cook until onions become tender but not fully cooked.

Add half the amount of all spices. Stir well. Toss the zucchini noodles into the mixture and let cook for 3-5 minutes until zucchini is tender but still crunchy. Set aside.

In a separate pan melt remaining amount of coconut oil. Add 1 clove of minced garlic, onions and remainder of all spices. Let onions cook until tender. Add chopped pepper and mushrooms.

Cook until vegetables are tender. Add tomatoes, tomato sauce and paste. Let cook 5-10 minutes. Stir in spinach.
Add more spices to your liking. Add zucchini mixture to sauce and stir well.

Top with nutritional yeast.
