Clover Salad

We created this Clover Salad recipe for Saint  Patrick’s Day but it can be enjoyed anytime of year. Haven’t tried fruit in your salad, boy you’re missing out! This kiwi/grape combination will have your taste buds jumping like a leprechaun on St. Patrick’s Day!

Did you know there are unlimited forms of salad? It’s true, you can add any combination to make a salad different so it has different nutrients, so it has different flavour and even so it has different colours.

You can have a salad for lunch, for dinner; you can have a side salad or you can turn a salad into a full meal. There’s all kinds of different ways to implement a salad into your day.

A salad is energizing, it’s cleansing, it’s even healing. So the next time you think about a salad, think of the health benefits and think of the never ending ways to spice them up!


6-8 cups greens (Kale, Spinach, Lettuce)

1/2 cup feta cheese, crumbled or cubed

1/2 avocado, sliced into chunks

1/2 green apple, cut into chunks

1 kiwi, cut into chunks

1/2 cup green grapes, sliced in half

1/2 cucumber, cut into chunks

1 tbsp olive oil

2 balsamic vinegar

sprinkle of Himalayan salt

sprinkle of pepper

Assembling the Clover Salad

Wash all produce. Tear or cut greens into bite size pieces and place in a large bowl. Prepare all produce by cutting into bite size chunks. Place all produce and cheese on top of greens in the bowl. Drizzle oil and balsamic on top of salad.

Toss well. Sprinkle with salt and pepper and toss again. Serve right away so greens do not wilt. Enjoy!
