To boost the nutrients of the Dairy Free Peaches and Cream Oatmeal we’ve also added a chia seed base and a sprinkle of pumpkin seeds on top. It’s quick and easy to make so you are efficient in the morning.
A breakfast that the whole family will enjoy!
Ingredients
(serves 2)
1/2 cup rolled oats
1 cup water
1 peach
1/2 cup plain unsweetened coconut yogurt
1 cup almond milk
1 tbsp honey
sprinkle of cinnamon
2 tbsp Chia Seeds
2 tbsp pumpkin seeds
How to make it…
Place 1 tbsp of chia seeds in each bowl. Pour a dash of almond milk over chia seeds and stir so they are well mixed. Let the chia seeds soak until they become jelly about 5-10 minutes.
Place rolled oats, water, honey and cinnamon in a pot and bring to a boil. Reduce heat to low and cook for 5-10 minutes or until oats are soft. Stir frequently so the oats don’t burn on the bottom.
Divide cooked oats in half and place on top of chia seed mixture. Top each bowl with 1/4 cup coconut yogurt, 1/2 sliced peach, 1 tbsp of pumpkin seeds and a drizzle of honey if desired. Pour 1/2 cup almond milk on top if desired.
