This Green Detox Soup recipe is one of our favourite recipes from our Monthly Membership group and also goes over very well on our social media pages so we thought we’d break it down, turn it into a blog post and share with you!
This is a perfect soup for a rainy day, when you need some extra nutrients or if you’re looking for a little cleansing after a long weekend of treats and unhealthy snacks.
Ingredients:
- 1 leek
- 2 garlic cloves
- 1 small head of broccoli
- 6 kale leaves
- 1 small zucchini
- 2 celery stalks
- 2 tbsp coconut oil
- 1 quart veggie broth
Directions:
Wash and chop 1 leek, 2 cloves garlic, 1 small head of broccoli, 6 kale leaves, 1 small zucchini, 2 celery stalks. Lightly heat 2 tbsp coconut oil on low heat, add leaks and garlic and slowly sauté. Add 1 quart of veggie broth and remaining veggies. Slowly bring to a boil and cook until zucchini is soft. Add salt and pepper to taste and fresh chopped parsley on top.
Add 1/2 up cooked quinoa per serving
*try not to over cook veggies (recipe makes roughly 3-4 servings)
