Ingredients
4 cups spinach
2 eggs
1 Tbsp C8 MCT oil
1 tsp vanilla
2 tbsp maple syrup
1/2 cup coconut yogurt
2 cup Complete Truth Protein
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp Himalayan salt
1/2 cup chocolate chips
Step One
Pre-heat oven to 350 degrees celsius. Line a cookie sheet with parchment paper.
Step Two
Place spinach and all well ingredients in the blender. Blend until smooth.
Step Three
Combine all dry ingredients in a large bowl.
Step Four
Pour wet ingredients from the blender into the bowl with the dry ingredients. Stir until well combined.
Step Five
Pour 1/4 cup of pancake batter onto the cookie sheet. Repeat until the cookie sheet is full. Generally 4-6 pancakes fit one cookie sheet. Bake for 10 minutes. Flip the pancakes and return to the oven for an additional 5 minutes.
Makes approximately 8-10 pancakes
