Guilt Free Coconut Chocolate Parfait

I was looking around the house for a healthy treat, I had no idea the treasure I was going to find in this guilt free coconut chocolate parfait. I think most of us could agree, the evening is the most difficult time to avoid unhealthy, sugary, processed snacks that don’t do any of us any good.

So I was thinking about what kind of healthy snack I could create. I know I just bought some Cacao that was sitting in the cupboard so I started flipping through recipes online. It’s so difficult to find healthy recipes that taste good, turn out and are satisfying.

This is where my experiment began and by the end of this post you’ll find out where it ended up.

What you’ll need:

  • Frozen Berries (get creative: strawberries, blackberries and raspberries go very nice together)
  • Mixed nuts (almonds and walnuts)
  • Coconut ice cream

Chocolate Syrup 

  • 1/4 cup Raw sugar (I used coconut sugar)
  • 1 tbsp honey
  • 1/4 cup cacao
  • 1/2 cup filtered water
  • 1 tbsp vanilla

This is very simple, I put in on the burner first and on very low heat so the nutrient properties wouldn’t be affected.

Add the honey first so it has time to melt, then the water and slowly mix in cacao and sugar as you stir. Then add your vanilla.  You’ll need to stir occasionally as your chocolate syrup begins to heat so all of the ingredients mix together.

Next Steps 

Add coconut ice cream to a jar or bowl, 1 cup is more than enough for a healthy snack with all the other ingredients added. Be sure to pick a clean brand to keep this dessert healthy. Yes these cost more than conventional dairy ice cream but the flavour is unreal and skipping the stomach issues or bloated feeling afterwards is priceless.

Add Your Berries 

Take our your berries 20-30 minutes before you are ready to put this beautiful array of goodness together so they have a chance to melt a bit. Use 1/4 cup of berries.

Walnut and Almonds 

Place your nuts on the cutting board and chop finely. This is preference. If you like small bites chop them finer. 2 tbsp of chopped walnuts and almonds should do it.

Finishing Touch

Bring out the artist in yourself! Drizzle on this healthier chocolate syrup to top it off! You can also put the chocolate on first and then the nuts, I’m not sure it matters. You also see roasted coconut flakes in this picture. Feel free to get more creative with more nuts and seeds or addition like coconut flakes.

Final Recipe 

  • 2 tbsp chocolate syrup
  • 2 tbsp nuts
  • 1/4 mixed berries
  • 1 cup coconut ice cream
