Tantalizing Mussels in tomato sauce recipe! It was hard to find a healthy version of this that didn’t have oils I wouldn’t exactly approve of. And for some reason many conventional recipes add sugar to ‘muscles in red sauce’, so I decided to make my own and share it with you.
This recipe is healthy, nutritious and incredibly delicious.

Ingredients:

– 1lb mussels
– 1 med sized white onion
– 3 cloves garlic
– 2 cans tomatoes
– 2 cups chopped mushrooms
– 1 cup chopped green pepper
– coconut oil

Directions:

Step #1

Sautee chopped garlic and onions in coconut oil on low. Find a happy medium between translucent onions and not browning garlic.

Step #2

Add sautéed garlic and onions to an oven safe pan. Add 2 cans of drained tomatoes. Place in the oven for roughly 1 hr or until consistency is where you want it (liquid should be mostly gone).

Step #3

30 mins into the baking, add your chopped mushrooms and green peppers and let bake or another 30mins.

Step #4

Remove creation from the over and place in a pan on the stove which has a lid.

Step #5

Add muscles to steam in the mixture you just baked, cover for roughly 15 minutes (or until all of the muscles are open).
 
Note: Don’t eat the muscles that don’t open.
 
*Serve on top of a bed of quinoa or brown rice. Add a side salad as well to make this a complete meal.
