This Sweet Potato Eggs Benedict recipe will have your mouth watering.  Skip the sauce and the gluten with this Sweet Potato Eggs Benedict recipe. A burst of flavour in every bite. It’s so easy on the stomach that you won’t be able to eat just one.


  • 1 sweet potato
  • 1 avocado
  • 4 fried or poached eggs
  • handful of sprouts (alfalfa, pea, sunflower etc.)
  • 4 tbsp Hummus
  • 4 tbsp Salsa
  • 1 tbsp Coconut Oil
  • Nutritional Yeast
  • Himalayan Salt
  • Pepper
  • Dill

Step One

Preheat oven to 350 degrees. Line a cookie sheet with parchment paper. Peel one medium size sweet potato. Thinly slice sweet potatoes lengthwise. For best results use a mandolin. Drizzle with olive oil and sprinkle with Himalayan salt, pepper and dill. Cook for 15-20 minutes until golden and cooked all the way through.

Step Two

Melt coconut oil in frying pan. Crack eggs into the pan. Sprinkle with Himalayan salt, pepper and nutritional yeast. Cook eggs as desired.


Step Three

Once sweet potatoes are cooked spread a think layer of hummus on the bottom. Place avocados, sprouts and eggs on top. Serve with salsa.
