This Triple Berry Salad is jam packed with flavour and will have your taste buds jumping. Finding fresh local berries will be the key to success with this one. The juicer the better.
Enjoy it as a meal by adding quinoa or add to the side of any meal for a lighter option. You can even add a cooked chicken breast if you wish. The possibilities are endless with this delicious, versatile salad.
Serves 4 people
- 4-6 cups spinach
- 1 cup sliced strawberries
- 1 cup raspberries or blackberries
- 1 cup blueberries
- 1/2 cup sliced almonds or walnuts
- 1/3 cup chopped basil
- 1 avocado, chopped
- 4oz feta cheese
- 1 cup Quinoa
- 2 cups water
Preparing the Triple Berry Salad
Place quinoa and water in a pot. Bring to a boil, cover, turn down to low. Cook for approximately 15 minutes. Lift cover and stir once or twice. Once cooked, remove from heat and keep covered.
Mix the remaining ingredients in a bowl. Drizzle with balsamic vinegar and olive oil. Sprinkle with Himalayan salt and pepper.
Add ½ cup cooked quinoa to each serving.
Feel free to add cooked chicken breast as well.
