Remember how much you loved Mac and Cheese as a kid!? Then remember how you thought you’d have to give it up forever now that you’re vegan, want eat more like a vegan, maybe you or your children can’t have dairy products anymore?
Regardless of the situation you’re in or why you’re interested in a recipe like this, you can now take comfort in the fact that you can have mac and cheese again, it absolutely tastes delicious and on top of that it’s actually good for you!


Cook macaroni al dente, drain, and set aside. Bring several cups of water to boil in a small pot.
Place chopped potatoes, carrots, and onion in the boiling water, and cook for about 10 minutes, or until vegetables are tender and soft enough to blend.
Cooking time will vary slightly, based on how small you have chopped your veggies. When veggies are soft enough to blend, use a slotted spoon to remove them from cooking water, and place them in your blender.
Add ¾ cup of cooking water to your blender, along with your remaining ingredients. Blend until smooth.
Mix sauce with cooked macaroni noodles.
