Vegetarian Stir Fry

This is one of my absolute favorite recipes and I think you’re going to love it. Let’s start by gathering all of our ingredients.

We’re going to need some vegetables like carrots, peppers, mushrooms, and some greens – I’m using spinach but you can substitute any kind of leafy green.

We’ll also need some oil for sautéing, I prefer coconut oil, a few cloves of garlic and ginger, and some rice.

Heat the oil in a large pan over medium-high heat. Add the garlic and ginger and stir fry for a few seconds until fragrant. Next, add the vegetables one by one.

First the carrots, then peppers, mushrooms and finally the greens. Stir fry all the vegetables together until they are cooked through but still slightly crisp. For the rice, cook it according to package instructions.

Once all your ingredients are cooked, toss everything together in the pan over high heat for a few minutes to bring it all together.

Finally, serve your veggie stir-fry with a sprinkle of sesame seeds for extra flavor and you’re done! This vegetarian stir fry is so easy to make and it’s packed full of flavor and nutrients.
