3 Ways to Transform your Veggie Greek Pizza Recipe into a Healthier Version
Pita Bread – Choose an organic whole wheat pita. This will be a much thinner pizza crust and contains less unhealthy fats. Too much wheat can cause lots of discomfort in the belly and cause problems in the digestion process. Less is more. With a nice thin crust your belly will be at ease.
Organic White Cheese – Always choose white cheese. Cheese is not meant to be orange. It is dyed that way. I can’t understand why that is but I do know that those dyes and chemicals are very harmful to our bodies. Stick with white cheese and organic if possible. This will be the cleanest cheese possible.
Skip the Sauce – Most pizza sauces have a ton of ingredients and contain GMOS. If you stick with an olive oil base with lots of yummy spices if will save you from consuming unwanted products.
Ingredients
- 4 pita rounds
- 2 1/2 Tbsp extra virgin olive oil
- 3 garlic cloves, minced
- 1/2 tsp dried oregano
- 1/4 tsp dried basil
- 1/8 tsp dried thyme
- Salt and freshly ground black pepper
- 1 cup organic white cheese
- 1 cup feta cheese, crumbled
- 1/2 cup chopped green peppers
- 1 cup diced grape tomatoes, halved
- 1/3 cup chopped kalamata or black olives
- 1/4 cup chopped red onion
- 1 Tbsp chopped fresh parsley
Directions
Preheat oven to 450 degrees. Place pizza stone in oven and rest 30 minutes. Meanwhile combine 1 1/2 Tbsp olive oil and garlic in a small bowl. Brush pita bread evenly with olive oil mixture. Sprinkle evenly with oregano, basil, thyme and season lightly with salt and pepper.
Top evenly with half the amount of organic white cheese. Bake in preheated oven 10-12 minutes until crust is golden. Meanwhile, saute peppers and onions in a skillet in 1 Tbsp olive oil over medium high heat until tender but still crunchy.
Remove pizza from oven and top with peppers, tomatoes, olives, onion and parsley. Top with remaining organic white cheese and feta cheese. Return to oven for 5 more minutes or until the cheese on top is melted. Cut into slices and serve.
