Ingredients
For the Base
- 2 tbsp TF C8 MCT Oil
- 1 medium yellow onion, chopped
- 1 (8 oz) package sliced cremini mushrooms
- 2 celery stalks, thinly sliced
- 2 carrots, thinly sliced
- 2 tbsp minced garlic
- 2 tsp chopped fresh sage
- ΒΌ tsp cayenne pepper (Optional)
- 1 dried bay leaf
For the Soup
- 2 pounds bone-in chicken thighs, skin removed
- 8 cups unsalted chicken broth
- Β½ tsp salt
- Β½ tsp ground pepper
- 2 cups chopped kale (stem removed)
- 2 tbsp fresh lemon juice
Instructions
- Prepare the Base
- Heat MCT oil in a large saucepan over medium heat
- Add onion, mushrooms, celery, and carrots
- Cook while stirring occasionally until vegetables begin to brown (about 6 minutes)
- Add garlic, sage, cayenne (if using), and bay leaf
- Cook for 1 additional minute, stirring constantly
- Cook the Soup
- Add chicken, broth, salt, and pepper
- Bring to a boil over medium-high heat
- Reduce heat to medium and simmer until chicken is fork-tender (about 20 minutes)
- Remove chicken to a plate and let cool for 5 minutes
- Finish the Soup
- While chicken cools, add kale to the soup
- Return to simmer and cook until kale is tender (about 5 minutes)
- Remove and discard bones from chicken
- Shred chicken meat
- Stir in lemon juice and shredded chicken
Storage & Meal Prep Instructions
- Divide soup evenly between 7 containers
- Allow to cool completely before sealing
- Store in refrigerator for up to 5 days
- Reheat individual portions in microwave for 2-3 minutes or on stovetop until hot
