I’ve been on a pancake kick the last little while. I can’t believe how easy they are to make, and they don’t take long to cook. A better version of fast food. I found a healthy recipe and slightly modified it. You don’t have to use the exact ingredients but if you get close I’m sure you’ll find yourself with a healthy meal. These ‘fun’ meals that kids love don’t have to be unhealthy and they don’t have to be boring or bland because of the substituted healthy ingredients. 2 out of the three times I cooked these they turned out really good. The last time they tasted like rubber but what can you do. I figure that’s a pretty good average so I’ll take the good with the bad. Another thing you could do is add baking powder or baking soda to the ingredient list to give these pancakes that fluffy, full look and texture. Personally I don’t bother with it but by all means.
I’ve made this same recipe with both bananas and blueberries, if you’re feeling adventurous try something else.
1 banana or ½ cup blueberries
1 tbsp flax seed
1 tbsp pea protein
½ cup of organic buckwheat flour (try some regular whole wheat flour if this isn’t easily accessible)
Agave nectar for taste (I use this instead of the conventional syrup).
This is a recipe for an individual that will make 2 good sized (filling) pancakes.
